Zucchini Casserole


    4 medium zucchini, washed and sliced
    3/4 cup carrots, shredded
    1/2 cup chopped onion
    6 Tbsp. butter
    2 1/2 cup herb stuffing
    1 cup cream of mushroom soup
    1/2 cup sour cream


    Cook zucchini 5 minutes in boiling water.  In 4
    tablespoons of the butter, saute onions and
    carrots.  Stir in 2 cups stuffing mix.  Add zucchini.  
    Fold in gently the soup and sour cream.  Put in
    casserole dish.  Mix the remaining ingredients (2
    Tbsp. butter and 1/2 cup stuffing mix) and put on
    Cook in 350 oven for 1 1/2 hour.
