Carrot Salad

    Ingredients

    2 lbs. carrots
    1 cup sugar
    1/4 cup salad oil
    3/4 cup vinegar
    1 tsp. salt
    1/2 tsp. pepper
    1 can tomato soup
    1 green pepper, diced
    1 onion, diced

    Directions

    Slice carrots 1/2-inch thick and cook until tender;
    drain and cool.  Mix together sugar, salad oil,
    vinegar, salt, pepper, and soup; bring to a boil.  
    Remove from heat; add carrots, green pepper,
    and onion.  Mix together and chill.  Keeps a long
    time in refrigerator.
