    Wild Rice Pacan Pancakes

    Ingredients

    2 cups cooked wild rice, cooled
    1/4 cup chopped pecans
    3 Tbsp. diced onion
    2 eggs, beaten
    2 Tbsp. flour
    1/4 tsp. salt
    pepper
    3 or 4 dashes Tabasco

    Directions

    In a large bowl, combine rice, pecans, onion,
    eggs, flour, salt, pepper, and Tabasco.  Mix well.  
    Drop batter by large spoonfuls, forming 3-inch
    pancakes.  Fry until deep golden, about 2 miniutes
    each side.
    Makes 6 large pancakes.
