Coconut Butter Icing
2 cups sugar 1 cup milk 1/8 tsp. salt 1 Tbsp. butter 1 tsp. vanilla 2 cups grated coconut Directions Combine sugar, milk and salt in saucepan. Bring to a boil. Cook for 7 minutes. Remove from heat. Add butter, vanilla and 3/4 cup coconut; mix well. Spread on cake while cake and icing are warm. Sprinkle remaining coconut on top of the icing of each layer. Warm cake will absorb icing. |
