    Spinach Balls II

    Ingredients

    2 pkg. frozen chopped spinach, cooked and
    drained
    2 cups stuffing mix
    1 small onion, chopped
    4 eggs, beaten
    3/4 cups butter, melted
    1/2 cup Parmesan cheese
    1/2 tsp. thyme
    Soy sauce
    Italian seasoning for salads

    Directions

    Precook and thoroughly drain spinach.  Combine
    spinach with remaining ingredients, adding
    seasonings, soy sauce, and Italian seasoning to
    taste.  Chill mixture.  Roll chilled mixture into balls
    or use a melon-baller to scoop out, freeze on a
    tray and then store in a container.  Do not defrost,
    and bake at 350 for 15 minutes or until lightly
    browned.
