Chicken Rio Grande

    Ingredients

    3 lbs. chicken, cut up
    2/3 cup flour
    4 tsp. salt
    1/2 tsp. black pepper
    1/2 tsp. Italian seasoning
    1/4 tsp. ground mace
    1/4 cup salad oil
    2 Tbsp. instant minced onion
    2 tsp. chili powder
    1/4 tsp. garlic
    1 cup chicken stock

    Wash and cut chicken into serving-size pieces.  
    Mix next 5 ingredients.  Dredge chicken in
    seasoned flour and brown in hot oil.  Add
    remaining ingredients.  If you prefer it hot, add a
    dash of red pepper.
    Cover and simmer 20 minutes or until chicken is
    tender.
    Serve hot with cooked rice.
