Pepperpot Chicken
3 lbs. chicken 2 Tbsp. soy sauce 1/3 cup flour 1 tsp. salt 3/4 tsp. ground black pepper 3 Tbsp. shortening 1/2 cup chopped onion 1 cup diced green pepper 1/4 tsp. ground ginger 1/4 tsp. garlic powder 1 1/4 cups hot water Cut chicken into serving-size pieces. Turn in soy sauce and then in flour mixed with salt and black pepper. Brown over moderate heat on all sides in shortening. Add next 5 ingredients. Cover and cook 30 minutes or until chicken is tender. Serve over cooked rice. Serves 6 |
