Chicken Fricassee, South Texas Style
4 lbs. chicken, cut up 2 cups boiling water 2 tsp. salt 1 cup tomato juice 1 - 6 oz. can tomato paste 1/2 cup chopped black olives 1/2 cup chopped green pepper 1/2 tsp. oregano leaves 1/4 tsp. ground black pepper 1 1/2 tsp. chili powder Place chicken in a saucepan the water and salt. Cover and cook for 1 3/4 hours over medium-low heat. Remove chicken from pan. Measure the broth and add additional water, if necessary, to make 3 cups. Return chicken and stock to saucepan. Add tomato juice, tomato paste, black olives and green pepper. Cover and cook slowly 25 minutes or until sauce has thickened. Add oregano, black pepper and chili powder 10 minutes before cooking time is up. Serve hot over cooked rice or noodles. |
