Chicken Cacciatore
3/4 cup olive oil 1 (6 oz.) can tomato paste 1 bay leaf 2 tsp. onion flakes 1 tsp. sweet basil 1 tsp. Italian seasoning 1 tsp. salt 1/4 tsp. thyme 1 cup chicken stock Brown chicken in olive oil. Add tomato paste on top of chicken. Add stock and wine. Blend, leaving some tomato paste on chicken. Add next 6 ingredients and blend. Simmer approimatly 30 minutes and blend sauce into chicken. Simmer another 15 to 20 minutes or until sauce is thick and chicken is done. Serve with either rice or spaghetti. |
