    Cheese Fondue

    Ingredients

    2 cloves garlic
    1 1/2 cups any light white wine (Neuchatel, Chablis or
    Riesling)
    1 pound Swiss cheese, shredded
    3 tablespoons flour
    3-6 tablespoons kirsch
    salt, pepper and nutmeg to taste
    French bread for serving

    Directions

    Dredge cheese in flour. Rub the inside of cooking
    pot with a clove of garlic.
    Pour in wine and set over low heat on stove.  Add
    cheese in handfuls, stirring until mixture begins to
    bubble.  Add seasonings.  Then add Kirsch.  Remove
    from heat and set immediately over preheated fondue
    flame to serve.  
    Serve with French bread cut into 1-inch cubes.
