Blueberry Cake
2 eggs, separated 1 cup sugar 1/2 cup shortening 1/4 tsp. salt 1 tsp. vanilla 1 1/2 cup flour, sifted 1 tsp. baking powder 1/3 cup milk 1 1/2 cup blueberries Directions Beat egg whites until stiff. Add about 1/4 cup of the sugar. Cream shortening. Add salt and vanilla to shortening and add remiaing sugar gradually. Add egg yolks and beat until creamy. Measure and sift the baking powder with the sifted flour. Add alternately to creamed mixture with the 1/3 cup milk. Fold in the egg whites. Coat the blueberries with flour and fold them in. Turn into a greases 8x8-inch pan. Bake at 350 for 50 minutes. Cool on rack. |
