Penuche Coconut Bars

    Ingredients

    1/2 cup butter
    1 1/2 cup brown sugar
    Flour
    1/2 tsp. salt
    2 Tbsp. milk
    2 egg, beaten
    1 tsp. vanilla
    1/2 tsp. baking powder
    3 1/2 oz. can flaked coconut
    1 cup chopped pecans

    Directions

    Blend butter and 1/2 cup brown sugar.  Add 1 cup
    sifted flour and salt; stir in milk.  Pat evenly in
    lightly greased 9x9-inch pan.  
    Bake at 325 degrees for about 20 minutes or until
    light brown.  Combine egg, remaining 1 cup brown
    sugar and vanilla; beat until thick and lemon
    colored.  Add 2 Tbsp. flour and remaining
    ingredients; mix well.  Spread over baked crust;
    bake for 20 minutes longer or until golden brown.
    Cool.
    Cut into squares.
