Coconut-Nut Squares

    Ingredients

    1/2 cup shortening
    flour
    1 1/2 cup brown sugar, packed
    1 tsp. vanilla
    1/2 tsp. salt
    2 eggs
    1 cup chopped nuts
    1 1/2 cup shredded coconut

    Directions

    Mix shortening, 1 cup flour and 1/2 cup brown
    sugar; press into 8 x 13-inch pan.  
    Bake at 350 for 10 minutes.
    Mix remaining 1 cup brown sugar, vanilla, salt, 2 or
    3 Tbsp. flour, eggs, nuts and coconut; spread over
    baked mixture.  Bake for 20 minutes longer; cut
    into squares while warm.
    Sprinkle with powdered sugar if desired.
