Apricot Bars

    Ingredients

    2/3 cup dried apricots
    1/2 cup soft butter
    1/4 cup sugar
    1 1/3 cup sifted flour
    1/2 tsp. baking powder
    1/4 tsp. salt
    2 eggs
    1 cup brown sugar, packed
    1/2 tsp. vanilla
    1/2 cup chopped nuts
    powdered sugar

    Directions

    Rinse apricots; cover with water.  Boil for 10
    minutes.  Drain; cool and chop aprictos.  Set
    aside.  
    Grease an 8 x 8-inch pan.  
    Mix butter, sugar and 1 cup flour until crumbly;
    pack into pan.  Bake at 350 degrees for 25  
    minutes.  
    Sift 1/3 cup flour, baking powder and salt
    together.  Beat eggs; add brown sugar.  Beat until
    well mixed.  Add flour mixture, vanilla, nuts and
    apricots to egg mixture.  Spread over baked
    layer.  Bake for 30 minutes longer.  Cool in pan.  
    Cut into squares; roll in powdered sugar.
