Almond Squares

    Ingredients

    1/2 cup oleo
    1/2 cup sugar
    1/4 tsp. salt
    4 eggs, separated
    1 cup flour
    1 cup sugar
    1 cup almond paste
    juice of 1/2 lemon

    Directions

    Combine oleo, 1/2 cup sugar, salt, 1 egg plus 1
    egg yolk, and flour.  Mix thoroughly.  Press into
    9 x 13 pan.  Bake 10 minutes at 400.  
    Beat 3 egg whites until stiff, gradually adding 2
    tsp. sugar.  Set aside.  Combine sugar, 2 egg
    yolks, almond paste, and juice of lemon.  Fold in
    egg whites.  Spread over crust, sprinkle with
    coconut.
    Bake at 325 for 30 minutes.
